Recipe for wasabi mayo
Mix 1 egg, 120 ml sunflower oil, a pinch of salt and 1 tbsp sugar. Add 3 tbsp lime juice, 1 tsp lime zest and 2 tsp wasabi paste and mix. Blend with a hand blender until you have a creamy wasabi mayo.
Wasabi is one of Japan’s national spices. It is a wild plant of the cruciferous family, native to marshy areas along rivers. The Japanese have been making this spicy, hot paste from the plant’s stem and its fine sprouting roots for hundreds of years.
Most wasabi pastes contain no more than 5% real wasabi. Instead, the flavour is created by a combination of horseradish and mustard oil, green food colouring, and other ingredients.
