From salmon and ebi nigiri and pickled red radish and salmon maki to inside-out rolls filled with surimi and wasabi-edamame mayonnaise, cooked salmon mousse with crisp cucumber, long beans, cooked tuna mousse and fried Swiss chicken with pickled white cabbage and curry sauce.
